Photoshop (and presumably Acrobat?) use an Adobe technology called XMP, 
documented here:

As I recall, you could build XMP with PHP and put it into any binary 
file, as long as you were willing to do some bit-level manipulation. 
It's been a while since I looked at it.

Having a PHP class that handled this for JPEGs would be pretty 
excellent... anybody know of one?
